Tomato Tortellini Soup

 Recently some friends shared a FABULOUS soup recipe with us, and I had to share it with y'all. 

This soup is beyond easy to make and is a delicious treat on a cold night. Also, the leftovers are soooo good.

Tomato Tortellini Soup
Serves: 8. Prep Time: 10 minutes Cook time: 30 minutes


1 tablespoon oil of choice (I used olive)
1/2 of onion, diced (around 1/2 cup)
1 tablespoon minced garlic
1 pound Italian sausage (you can use hot sausage for a kick)
1 28 ounce can of crushed tomatoes
32 oz chicken broth (canned or homemade)
1 tablespoon of basil (a few fresh leaves, diced or dried)
1 package of cheese tortellini
1 cup packed fresh spinach
Salt and pepper, to taste
Place oil and diced onion in the bottom of a large pot (I use my dutch oven) and turn the stovetop to medium-high. Saute onions a few minutes, until they are soft and turning translucent. Then add in garlic
Crumble Italian sausage and add to the onion and garlic mixture. Brown the Italian Sausage, cooking though until there is no pink
Add in crushed tomatoes, chicken broth, basil, salt and pepper. 
Bring the pot to a boil then reduce heat to low and cover. Let the soup simmer for twenty minutes.
After twenty minutes, add in spinach and tortellini and simmer for an additional ten minutes, until tortellini has grown in size and is tender
Serve with crusty bread and shaved parmesan
