Meal Plan - July 6th

I hope you all had a wonderful 4th of July with loved ones! 

 Here's our meal plan for the week. We were generously gifted a DELICIOUS smoked Boston Butt that we shredded and portioned, which we will incorporate into two meals (the rest is frozen for later use - score!). We've also been getting lots of cucumber, tomato, and fresh herbs from our garden that we will put to good use! 


Leftover BBQ pulled pork with sauce
 Chopped slaw/spinach salad with homemade vinaigrette 
(1/2 cup olive oil, 1/4 cup ACV, tablespoon of mustard, tablespoon of honey or maple syrup, dashes of S&P. leftovers keep for a week)
Classic deviled eggs (we leave out pickle/hot sauce)
Sliced garden tomatoes 

Simple roasted chicken thighs 
(Heat oven to 450.
 Pat chicken pieces dry with paper towel. 
Season/rub pieces with dashes of salt, pepper, and chili powder.
Roast for 30 minutes, flipping halfway. SO GOOD.)

Skillet green beans (using chicken drippings - trust me!)

Leftover pork tacos
Instantpot black beans (you can use your crockpot or canned)

Grilled salmon
Simple salad (use up rest of vinaigrette) 
*Hopefully some leftover pineapple salsa, too!

Grilled Pizzas with various toppings to use up leftovers
(This week will most likely be leftover shredded chicken, BBQ sauce, grilled onions, leftover pineapple, and feta cheese)

Thai takeout!

Simple egg scrambles 

Cobb Salads 
Lemony lentil soup with cilantro (doubled made in the instantpot)

Green smoothies (we've been subbing fresh blueberries for the banana!)
Overnight oats
Egg scrambles to use up any sad-looking produce 

Homemade popsicles (blend coconut water with fruits of choice. Freeze in molds. VOILA)
